Our Mesoob Pak — known more widely as Mysore Pak — is a South Indian classic made from gram flour, ghee and sugar, cooked until it becomes a crumbly, melt-in-the-mouth fudge. The texture is halfway between a shortbread and a fudge: firm on the outside, crumbly inside, rich with ghee. It's a very different sweet to most North Indian mithai — earthy, buttery and deeply satisfying.
