Sweet Sata, known in North India as Balushahi, is a flaky, deep-fried pastry dipped in thick sugar syrup. The outside is crisp and golden, the inside layered and tender — somewhere between a doughnut and a shortbread in texture. The glaze sets into a frosted, crystallised coating. A rich and indulgent treat that's popular across India and particularly beloved at celebrations in the Gujarati community.
